Mashing of the beer wort:

This e-booklet covers the theoretical bases to be able to understand the mashing in a brewhouse. Starting with the explanation of how the specific weight and the degrees of Plato are related, we learn how an enzymatic reaction works to reduce them.  We learn which variables influence the enzymatic processes and of course what types of enzymes work when and under what conditions during this brewing process. The malt ingredients will be explained and how and to which products they will be transformed during the wort making process, as well as to desired and undesired components and how to control these processes. It will also be explained what positive or negative effects these products will have on the final beer. Calculations necessary to define and control the wort brewing will be explained.

How it works:
